Q: What is the difference between coconut oil and coconut butter?
Coconut oil is JUST the oil
that is extracted from the meat.
Coconut butter is the whole
meat of the coconut pureed into a creamy butter.
Coconut meat (by nature) is
approximately 65% oil.
Q: Something doesn't look quite right when you open the jar?
When coconut butter is produced, it is heated to 100° F (so it's really liquidy and creamy). As it cools, the coconut oil tends to separate, floating up to the top, then solidifying. When it solidifies, it can occasionally form into a something that resembles mold, but it is not mold.
Artisana could avoid that by using some kind of funky emulsifier, but they chose to go with the unadulterated route. If you just warm it up, you can stir it back in --no problem.
