Because of its rich, naturally-occurring mono-unsaturated fatty acids

when refrigerated (other olive oils will usually harden). This 100% olive oil is not blended with inferior oils, such as canola or
cotton seed oil (a common practice to cut costs, that is never disclosed on
the label). Nitrogen-flushed
to protect freshness and prevent oxidation: Bottled in PET # 1 nontoxic
