Origin:  Indonesia.  Compared to soil-depleting, water-intensive crops like sugar cane, coconut sugar is one of the most ecologically-sustainable sweeteners in the world.  It also helps to raise small farm communities in Indonesia out of poverty.  Your purchase of this product will support Indonesian farmers' education about global markets & cooperative management--creating a legacy of empowerment.

How it is made: Farmers climb the coconut palms and collect the sugar blossom nectar by gently slicing the flower.  Once harvested, the nectar is transferred into kettles and boiled.  The kettle-boiling process lowers the moisture content of the nectar, which enables solidification.  Once cooled, the crystallized brick is then formed into granules.

Taste: Subtly sweet with an almost haunting aroma of smoke and caramel, Coconut Palm Sugar is nothing short of artisanal perfection.
